My pathetic attempt at cooking; weeks 1-3.

My half-ass attempt at cooking has become pathetic. I was going to start my attempt when I did the original post on March 13th. But we were out and about and it was getting late so I talked my hubby into picking up Chinese food.

If I’ve learned anything from watching My Big Fat Greek Wedding several times, it’s that you need to make it so your guy thinks it’s his idea….and guilt him. ” The man is the head, but the woman is the neck. And she can turn the head any way she wants.” ~The great Maria Portokalos.

Me: It’s getting so late and we’re both really tired. I hope I can find something to make. *sigh* Have I mentioned my cramps are really bad. I don’t know how much longer I can stand up. Ow! Hubby: Well, do you just want to pick up something?

I don’t like seafood but a few times a year I’ll give it a chance. When we lived in Seattle, I ate more seafood in the year and a half that I was living there than my whole life. There was a restaurant there (can’t remember the name but it was on Alki Beach) that had the most orgasmic clam chowder ever.

Monday night I attempted to make angel hair pasta with clams, garlic, and parmesan. Instead of going to the freezer for our standby garlic bread, I made my own asiago cheese garlic bread.

When I say “made my own” I mean I sliced the already made bread, buttered it, added minced garlic and the cheese. Maybe someday I’ll make my own bread, right after I’m able to eat lunch before 4 pm and pee in peace.

The bread turned out pretty good, the pasta sucked. The little hummingbird has been cutting two teeth and is in agony. After my hubby put her to bed and we sat down to eat, she started screaming bloody murder. She’s normally a good sleeper but she’s been waking up a few times a night while these teeth are coming in. Teething sucks ass!

By the time we were able to eat, the pasta was nasty. My hubby had a second serving but I think it was only to make me feel better. Awww!

I like baking a lot more than cooking so today I made some blueberry and apple muffins and granola for the little hummingbird. Total fail. I love this little recipe book I got but either our oven is off or the times and temperatures in the book are.

The muffins practically burnt even though I decided to cook them for only 20 minutes. The recipe said 20 to 30 minutes. The granola was black by the time I got it out of the oven and it was supposed to still have some time to bake. I was giving the hummingbird a bath and while we were upstairs, I smelled it burning so she got one of the fastest baths to date.

I like some things burnt (popcorn, brown sugar cinammon pop tarts) so it wasn’t bad if you dug under all the really burnt parts. I’ll probably try it again at a lower temp because it is yummy. My little girl even liked it. Then lunch came.

My daughter is a very picky eater and I’ve been hoping to have her try different things. She’s been in even less of a mood to eat because of the evils of teething. Poor little girl.

I’m not getting on a pedestal or anything but we try to give her food that’s as healthy as possible. Fortunately she likes most of it, just not veggies.

Since I was baking all morning, I was on a roll and decided to give the little hummingbird something different for lunch. I made a pita pocket with hummus, avocado, and cheese with grapes and greek yogurt on the side. She LOVES yogurt and since she was eating the bits of granola that weren’t burnt, I sprinkled some on her yogurt.

Then I gave myself a big pat on the back, put her in the highchair, and expected her to chow down and eat this yummy food. All she ate were a few grapes. That’s it. Just a few grapes. *le sigh*

I'm only going to eat two grapes so then you can worry for the rest of the afternoon that I didn't eat enough.

As much as I want to throw in the towel, I don’t want to give up yet and hope to have some better progress when it comes to cooking for my hubby and the hummingbird in the next few weeks.

I want to give a BIG thank you to Fête Foreign and her MIL’s Spinach Quiche with Feta recipe. I made it last night and it was the first time in a long time that I didn’t want to stab someone while I was cooking. Very easy and delicious. Check out the recipe here.

Spinach Quiche with feta and goat cheese on top along with honey butter carrots. Yum!

*I decided to use both feta and goat cheese. We love our cheese around here. I also used a refrigerator pie crust for the Quiche to save time.  Seriously, if you get stabby like me when you cook, try this recipe.
