Lemon Garlic Linguine

This is a very simple go to recipe when you don’t have much time to cook. I tried this last week and while my 3 year-old picky eater wouldn’t touch it, my husband and I loved it. I also love that I wasn’t stuck in the kitchen for too long. Enjoy!


8 oz dry linguine

1/2 cup grated parmesan

4 tsp olive oil

2 cloves garlic

1 lemon

4 tbsp pine nuts

10 basil leaves, chiffonaded

Salt and black pepper, to taste


First, start to boil water for linguine and cook according to directions. Next, pour olive oil and chopped up garlic into a small frying pan and let it cook over low heat, until the garlic starts to brown on edges. Immediately remove from heat and reserve.

Chiffonade the basil leaves.

Take the cheese and pine nuts and put them into a large bowl along with the garlic oil, garlic chunks and basil. Squeeze in lemon juice. Throw in the linguine and toss until well combined. Plate and add black pepper.
