Fresh Berry Shortcake Skewers


skewers11These are so simple and satisfies your sweet tooth when your looking for something on the healthy side. I also make these for the hummingbird but leave out the angel food cake and use cake pop sticks instead for her school lunches. It’s a fun way to get her to eat her fruit.

There aren’t really any stringent directions you need to follow for this. I cut the angel food cake into small cubes. With the strawberries, depending on their size, I cut them up in quarters and with the larger ones, I cut them in six pieces.

Alternate the berries and shortcake however you like. I arranged them by adding two blueberries to the middle of the skewer, a shortcake cube, and a strawberry. Repeat and Tada! You have some yummy fresh berry shortcake skewers. You could also put them in the freezer for a great frozen treat.

      The original idea I had was to cover the fruit and cake in vanilla Greek yogurt but after several attempts, I just couldn’t get the frozen yogurt covered berry shortcake idea to work. Damn, that would have been good. 🙂
